Bank Holiday Baking

It’s the May Day Bank Holiday in England and Wales and the snow is still around, I don’t know about you but it feels like it has been a long time since we have seen the sun.

Whether you are feeding a crowd or having a low key weekend there is nothing better than homemade baking.  Keep is simple with cheese scones, or rich chocolate Brownies. Brownie kits you can buy on line at www.bluemoosekitchen.com My Cheese Scone recipe is below.

Cheese Scones

175g SR Flour

!/2 teaspoon powdered mustard

25g butter

75g grated cheese

1 egg

2 tablespoons milk

Heat the oven to 220C, Gas 7. Grease a baking tray

Mix the flour, mustard, rub in the butter, add the cheese but leave a little for the topping

Add the egg and milk to make a soft dough, keep a little egg/mild for glazing

Roll out on a floured surface, ½ inch thick, use a fluted cutter to cut out shapes

Place on baking tray, brush with the egg/milk and sprinkle with cheese

Bake for 10 minutes, they should be golden brown
