Cranberry and White Chocolate Cookie Mix


These cookies are simply irresistible, studded with fine white chocolate and plump cranberries they are scrumptious and won’t last long when you bring them out of the oven.

You will need:
50g butter, melted and cooled
1 egg, lightly beaten
½ teaspoon vanilla essence (optional)


  • Preheat oven to 190C, gas 5
  • Mix together the butter, egg and vanilla in a big bowl
  • Add contents from the jar and mix well
  • Put in fridge for 10 minutes
  • Roll into small balls, the size of a walnut
  • Place on baking trays leaving space for the mixture to spread
  • Bake for 8-10 minutes until lightly browned
  • Cool slightly then transfer to cooling rack
